½tablespoonVegetable oilor olive oil
4Eggsmedium or large size
½tablespoonSesame oil
3cupsWhite riceCooked (preferably day-old)
12ouncesSpamsubstitute or add other types of protein (see notes)
1cupKimchiroughly chopped
¼cupKimchi Juiceliquid from Kimchi
1tablespoonSoy sauce
½stalkGreen onionssubstitute or add other types of vegetables (see notes)
1tablespoonSesame seedscan add more if desired for garnish

Instructions
Add (vegetable or olive) oil in a large skillet or wok, over medium heat.
½ tablespoon Vegetable oil
Add the eggs to the skillet and cook on both sides. Remove from the skillet and set on a plate.

Add sesame oil and white rice to the wok. Stir fry for about two minutes.
½ tablespoon Sesame oil, 3 cups White rice
Add the spam to the wok and stir fry for another two minutes before adding kimchi, kimchi juice, soy sauce, and eggs (broken up into smaller pieces). Mix well—season with salt and pepper as desired.
12 ounces Spam, 1 cup Kimchi, ¼ cup Kimchi Juice, 1 tablespoon Soy sauce, Salt and Black Peppers
Garnish with sliced green onions and sesame seed (if desired).
½ stalk Green onions, 1 tablespoon Sesame seeds
Notes
Use day-old rice, as it's firmer and perfect for frying.
Time-saving tip: use frozen stir-fry vegetables.
For a gluten-free option, use coconut aminos or tamari instead of soy sauce.
For an added crunch, cut the spam into thin strips, then pan-fry it before adding to the rice mixture.
