For the marinate:

Instructions
In a medium bowl, season season small cubes of pork with salt and soy sauce. Set aside.
1½ pounds Pork Belly, 3 tablespoon Soy Sauce
In a skillet over medium heat, sauté garlic, onion, and tomatoes in hot oil until softened and caramelized.
3 cloves Garlic, 1 medium Onion, 2 medium Tomatoes, 2 tablespoon Olive Oil
Add the marinated pork to the skillet.
Add potatoes, water (or broth), salt, black pepper, sugar and bay leaves. Simmer covered for 30 minutes.

Add the carrots to the skillet and simmer for 5 minutes or until the carrots are tender.

Add the green and red bell peppers. Cook for another two minutes. Season with salt and pepper to taste.
