Heat a large skillet or wok over medium-high heat and add the olive oil. Once the oil is hot, add the minced garlic and chopped onion. Sauté for a minute until fragrant.

Add the diced pork to the skillet until browned and cooked through. Remove the pork, garlic, and onions from the skillet and set aside.

Add beaten eggs to the skillet and scramble. Remove the scrambled egg from the skillet and set aside.

In the same skillet, add the diced carrot and frozen peas. Stir-fry for a few minutes until the vegetables are slightly tender.

Push the vegetables to one side of the skillet and add the cooked rice to the other side. Use a spatula to break up any clumps of rice, and stir-fry for a couple of minutes.

Add the cooked pork back to the skillet with the rice and vegetables. Mix everything together.

In a small bowl, whisk together the soy sauce and oyster sauce. Pour the sauce mixture over the rice and pork. Stir well to distribute the sauce evenly.

Lastly, add the thinly sliced green onions and give everything a final toss.

Season with salt and pepper according to your taste preferences. Both sauces contain salt, so be cautious while adding salt.

It's important to use cold, cooked rice for the best texture and to avoid mushy fried rice. If you don't have leftover rice, spread freshly cooked rice on a baking sheet and let it cool in the refrigerator for at least 1 hour before using it for the recipe.
