Cheesy Hash Browns with Jalapeño Breadstick Topping

This cheesy hash browns with crushed jalapeño breadstick topping is not only perfect to serve at a gathering for breakfast or brunch but it can also be used as a meal-prep to cut into serving portions and save in individual containers to eat during the week. How’s that for a satisfying breakfast on the go? The topping gives it a new crunchy and savory twist too!

This dish can also be made the night before, prepping all the ingredients together and putting them on the baking dish (less the topping) and refrigerated overnight. The next day, spread the topping evenly on the hash browns and bake as instructed. This is a family favorite and kid-friendly too!

Don’t let the jalapeño breadstick deceive you – it’s not as hot as you would think. It’s very mild actually. On a side note we like serving the breadsticks on a charcuterie tray with spreadable cheese too.

 

WHAT INGREDIENTS DO I NEED?

FOR HASH BROWNS:

  • 1 pkg. Simply Potatoes Shredded Hash Browns
  • 1 can (10.75 oz.) cream of chicken soup
  • 6 oz. shredded cheddar cheese
  • 1/2 c plain Greek yogurt
  • 1/2 c chopped onion
  • 2 T melted butter

FOR THE TOPPING:

  • 1 1/2 c Coleen’s Jalapeño Breadsticks (crushed) see the picture of the wrapper below👇 ->
  • 1 T melted butter

HOW DO I MAKE IT?

  1. Pre-heat oven to 350 degrees. Rub butter on bottom of rectangular ceramic baking dish or spray with non-stick cooking oil.
  2. In a large bowl, combine hash browns, cream soup, cheese, yogurt,  onion and melted butter, making sure all ingredients are mixed well. Spread into prepared baking dish.
  3. In a small bowl, mix crushed breadsticks and melted butter. Spread topping evenly over hash browns. NOTE: For a less crunchy topping, add another 1T of melted butter (total of 2T of melted butter) with the breadstick topping.
  4. Bake for 45 minutes, until hash browns are tender and topping is golden brown. NOTE: For variation: With 15 minutes remaining in cooking time, make a well in the dish and crack an egg in it; making sure to keep the yolk intact.
